Good Grains...

I once knew a princess who turned a frog into a prince.  Quinoa in a bag is alot like that frog, not much to look at with very little to offer! But, with a little attention from a willing princess, "WHAM", a prince is born! Just like kissing the frog, this dish is quick and easy! 

This recipe is very affordable and will easily feed a family of 5 (or it can be lunch for the Queen for several days)!  The quinoa and pesto can be found at your local Costco or any grocery store.

INGREDIENTS:
1 cup quinoa
1 cup each chopped zucchini, carrots, kale 
1/2 cup chopped onion

1/2 cup pesto



Boil 1 cup of quinoa in 2 cups of water.


Saute' veggies in large pan over medium heat until tender.


Mix quinoa and veggies and sprinkle with cheese as desired!
Serve this dish hot.  Refrigerate left-overs until ready to serve.
