Berry, Berry Good!

I love strawberries!  This recipe is very simple and delicious and is a tasty treat for any celebration.  It is a great dessert, appetizer, or side dish.

Recipe:
2 lbs large ripe strawberries
1 pint of sour cream
1-2 T lemon juice (to taste)
1 C powdered sugar (more or less can be added depending on your preference)




Wash and clean strawberries.


Mix together sour cream, lemon juice, and powdered sugar!


Serve!  
You can make your presentation much prettier than this.  
I could hardly get the plate on the table before my family devoured it!

Good Grains...

I once knew a princess who turned a frog into a prince.  Quinoa in a bag is alot like that frog, not much to look at with very little to offer! But, with a little attention from a willing princess, "WHAM", a prince is born! Just like kissing the frog, this dish is quick and easy! 

This recipe is very affordable and will easily feed a family of 5 (or it can be lunch for the Queen for several days)!  The quinoa and pesto can be found at your local Costco or any grocery store.

INGREDIENTS:
1 cup quinoa
1 cup each chopped zucchini, carrots, kale 
1/2 cup chopped onion

1/2 cup pesto



Boil 1 cup of quinoa in 2 cups of water.


Saute' veggies in large pan over medium heat until tender.


Mix quinoa and veggies and sprinkle with cheese as desired!
Serve this dish hot.  Refrigerate left-overs until ready to serve.

Once Upon a Time...

Once Upon a Time there was an imperfect Queen who lived in an imperfect castle with her imperfect King.  They had three imperfect daughters and were all perfectly happy together in the Kingdom of Imperfection.  The Queen seeing how hard her King worked wanted to support him and show her children the rewards of loyalty and devotion.  She tried many tasks to help her family where she saw a need.  She cared for the castle, cooked the food, healed their wounds, and crafted many things.  These seemingly simple tasks became of extreme importance as the kingdom had a great enemy who would attack whenever he perceived a weakness in the royal family.  He was sly and underhanded and without honor.  The Queen began to see that her role was vital in keeping the kingdom strong and healthy.  With the castle in order, the family fed, their hearts and minds well loved, they were best prepared to fight.  The enemy despised the Queen and the royal family but the Queen did not think on this.  She turned her mind to her purpose and believed with all her heart that with faith and perseverance they would indeed, against all odds,  live happily ever after.  

When the princesses were young, the Queen would read to them tales of old filled with adventure and wonder.  Stories and parables filled the princesses with delight and curiosity.    As the children grew they began to help the Queen with her tasks.  Each had their own unique talents and gifts and the Queen was quite pleased at how they were growing.  She began to keep a diary of the things she fed their bodies and minds for the day when they would become Queens of their own castles. She called it; "Food and Fairytales."
